How many times have we set out to do one thing, read our Bible, pray, etc. and something jumps in and takes it’s place without us even realizing it.  We think, I will do this one thing first and then get right to it. A “Leftover” Success

What do you do with leftovers? I’m always looking for interesting ways to use them. I hate to throw food away, but invariably if I’m not creative with them they will go to waste.  We forget they are in the fridge or either just get tired of them after day two or three. This past Sunday I had made a beef roast and had at least half left over.  I searched Pinterest for recipes that used leftover roasts and found one for shredded beef quesadillas. This recipe looked delicious so I decided to make it. I did change it up a bit from the original. Here is the link for the original I found on Pinterest.

It was a hit and is on the list for “let’s have this again!”  Here is my version:


Leftover Roast Beef (I used about 5 oz.- 2 ½ per quesadilla and warmed it just a little in the microwave, just to knock off the chill.)

Shredded Cheese (I used Trader Joe’s Shredded 3 Cheese Blend)

Whole Wheat Tortillas (I used Trader Joe’s)

Salsa ( I used Trader Joe’s Salsa)

Butter (I used Ghee-Clarified Butter)

Sour Cream


Butter both sides of the tortilla

Place in pan. Let tortilla heat on one side then flip.

Cover in Cheese

Once cheese starts to melt, add shredded/chopped beef to one side.

Add a small amount of cheese to top of beef.

Add salsa  to side opposite of beef

Slide onto plate and add chopped lettuce.

Flip half way over and add sour cream to the top if you like.

Serve with your favorite chips and salsa and enjoy!

Exploring Downtown Winston Salem

Lil J and I spent the day on Friday just hanging out, exploring and having a date day.  After we took care of some business he took me to the most precious bakery and coffee shop. Tart Sweets is located at 848 W. Fifth Street.  They have done such a great job renovating and decorating what was formerly a restaurant known as Michael’s.

Isn’t this the most amazing place for a coffee shop and bakery? The coffee  was fresh brewed and had a distinct flavor. Not at all bitter like some coffee shops.  I couldn’t resist the coconut pound cake and Lil J chose a Bacon Pecan Muffin. Both were so delicious.

We enjoyed relaxing and having some down time over a cup of coffee. If you’re looking for great atmosphere, great coffee and great sweets, we highly recommend Tart Sweets.

“Embracing” Change

In light of 2015 being a year of major change, some expected, some unexpected, I have decided to “embrace” change, accept it for what it is, grow from it and apparently take on some more.  I’m doing several different challenges this year.  I am doing a penny challenge. The concept is to  put a penny in a jar for every day of the week. Day 1, 1 penny, Day 2, 2 pennies. Today is day 12 and that’s 12 pennies.    Get it?  At the end of the year I should have over $600.00. I know!  Exciting. Continue reading
